I follow a strict Sriracha diet for breakfast, but when I’m making eggs for lunch or dinner – Cholula is the name of the game. These eggs cups can be made straight up without salsa or drowned in the stuff – it’s up to you. Either way they are delicious and super easy to make.

Eggs in Corn Tortilla cups Recipe

{Gluten free, Vegetarian, Runner Approved}

Ingredients:

Corn tortillas (as Camiseta Stade Rennais FC many as you want)

Eggs

Cheese

Salsa or hot Sauce

Green onions

Optional: Avocado, Sour Cream, Beans, Dos Equis

For some reason corn tortillas are sold in packs of 60 or more. and they get stale fast. So, start by microwaving your tortillas for 30-60 seconds or until soft.

Carefully place tortillas in a non-stick sprayed cupcake pan. It’s okay if they tear a little bit, the egg on the bottom will set. Optional: spread some beans on the bottom of the tortilla. (This makes it a little messier to remove from pan.)

Break eggs one-by-one into separate dish and pour into tortilla cups.

Bake at 350 degrees for 15 Camiseta Flamengo minutes or until whites start to set. remove from oven and top with cheese. place back in oven for 5 minutes for cheese to melt and whites to completely set.

Top with green onions and guacamole or sour cream.

Optional: add extra hot sauce to every bite!
